(Yes)vember Day 3: Thai Chicken Pizza
It's Day 3 of (Yes)vember. Here's a delicious, quick pizza recipe. Throw in a movie or some board games and you've got yourself a full-on party. Thai Chicken Pizza
6 round flatbreads (8-10" in diameter)
12 oz. peanut sauce
1 sliced red onion
1 bunch cilantro, chopped
2 C. shredded mozzarella cheese
2 C. cooked, cubed chicken (to make it easy, used canned or rotisserie chicken)
Place a few tablespoons of peanut sauce on each flatbread, smooth out until the sauce is about 1/2" from the edge.
Sprinkle chicken, red onion and cilantro evenly over the six pizzas.
Top with cheese.
Place on aluminum foil or baking sheet and bake at 400 deg. until crust is crisp and cheese is melted.
(Hint: serve with salad greens topped with oil/vinegar for extra veggies.)
